Ingredients

Scale
  • 2 fillets of white fish (such as cod or tilapia)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon, juiced and zested
  • Salt and pepper to taste
  • 1 cup cooked quinoa
  • 1 cup mixed greens
  • 1/4 cup tahini
  • Water to thin tahini
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix olive oil, minced garlic, lemon juice, lemon zest, salt, and pepper.
  3. Place the fish fillets in a baking dish and pour the lemon garlic mixture over them.
  4. Bake the fish for 15-20 minutes or until cooked through and flaky.
  5. While the fish is baking, prepare the tahini sauce by mixing tahini with water until desired consistency is reached.
  6. In serving bowls, layer cooked quinoa, mixed greens, and the baked fish.
  7. Drizzle tahini sauce over the top and garnish with fresh parsley.
