Ingredients

- 2 fillets of white fish (such as cod or tilapia)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 lemon, juiced and zested
- Salt and pepper to taste
- 1 cup cooked quinoa
- 1 cup mixed greens
- 1/4 cup tahini
- Water to thin tahini
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix olive oil, minced garlic, lemon juice, lemon zest, salt, and pepper.
- Place the fish fillets in a baking dish and pour the lemon garlic mixture over them.
- Bake the fish for 15-20 minutes or until cooked through and flaky.
- While the fish is baking, prepare the tahini sauce by mixing tahini with water until desired consistency is reached.
- In serving bowls, layer cooked quinoa, mixed greens, and the baked fish.
- Drizzle tahini sauce over the top and garnish with fresh parsley.
