- 1 cup cooked quinoa
- 1 cup mixed greens
- 1/2 cucumber (sliced)
- 1/2 cup cherry tomatoes (halved)
- 1/4 cup tahini
- 2 tablespoons water
- 1 tablespoon lemon juice
- 1 clove garlic (minced)
Instructions
- In a bowl, mix lemon juice, lemon zest, olive oil, oregano, garlic powder, salt, and pepper.
- Marinate the chicken breasts in the mixture for at least 30 minutes.
- Grill or pan-sear the chicken until fully cooked, about 6-7 minutes per side.
- In a separate bowl, whisk together tahini, water, lemon juice, and minced garlic until smooth.
- Assemble the bowl by placing quinoa at the bottom, followed by mixed greens, sliced cucumber, and cherry tomatoes.
- Slice the cooked chicken and place it on top of the salad.
- Drizzle with tahini sauce before serving.
