Ingredients

  • 1 cup cooked quinoa
  • 1 cup mixed greens
  • 1/2 cucumber (sliced)
  • 1/2 cup cherry tomatoes (halved)
  • 1/4 cup tahini
  • 2 tablespoons water
  • 1 tablespoon lemon juice
  • 1 clove garlic (minced)

Instructions

  1. In a bowl, mix lemon juice, lemon zest, olive oil, oregano, garlic powder, salt, and pepper.
  2. Marinate the chicken breasts in the mixture for at least 30 minutes.
  3. Grill or pan-sear the chicken until fully cooked, about 6-7 minutes per side.
  4. In a separate bowl, whisk together tahini, water, lemon juice, and minced garlic until smooth.
  5. Assemble the bowl by placing quinoa at the bottom, followed by mixed greens, sliced cucumber, and cherry tomatoes.
  6. Slice the cooked chicken and place it on top of the salad.
