Ingredients

  • 1/2 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • Zest of 1 lemon
  • 1/4 cup fresh lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or cooking spray.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and poppy seeds.
  3. In a separate bowl, mix the buttermilk, vegetable oil, eggs, lemon zest, and lemon juice until well combined.
  4. Gradually combine the wet ingredients into the dry mix, stirring gently until just incorporated.
  5. Pour the batter into your prepared loaf pan, smoothing the top with a spatula.
  6. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted comes out clean.
