Description

Ingredients

  • 1 cup lentils
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup parsley, chopped
  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • Water to thin tahini dressing

Instructions

  1. Rinse the lentils under cold water.
  2. In a pot, combine lentils and water, bring to a boil.
  3. Reduce heat and simmer for 20-25 minutes until lentils are tender.
  4. Drain any excess water and let lentils cool.
  5. In a bowl, mix olive oil, salt, and pepper with the cooled lentils.
  6. Add cherry tomatoes, cucumber, red onion, and parsley to the lentils.
  7. In a separate bowl, whisk together tahini, lemon juice, garlic, and enough water to reach desired consistency.
  8. Drizzle the lemon tahini dressing over the lentil mixture and toss to combine.
  9. Serve immediately or chill in the refrigerator before serving.
