Ingredients

- 1 cup lentils
- 2 cups water
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 red onion, thinly sliced
- 1/4 cup parsley, chopped
- 1/4 cup tahini
- 2 tablespoons lemon juice
- 1 clove garlic, minced
- Water to thin tahini dressing
Instructions
- Rinse the lentils under cold water.
- In a pot, combine lentils and water, bring to a boil.
- Reduce heat and simmer for 20-25 minutes until lentils are tender.
- Drain any excess water and let lentils cool.
- In a bowl, mix olive oil, salt, and pepper with the cooled lentils.
- Add cherry tomatoes, cucumber, red onion, and parsley to the lentils.
- In a separate bowl, whisk together tahini, lemon juice, garlic, and enough water to reach desired consistency.
- Drizzle the lemon tahini dressing over the lentil mixture and toss to combine.
- Serve immediately or chill in the refrigerator before serving.
Notes
- For added protein, consider adding grilled chicken or chickpeas.
- This dish can be served warm or cold.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
