Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, mix the buttermilk, egg, and melted butter until well combined.

- Turn the dough out onto a floured surface and gently knead it a few times until smooth.
- Roll out the dough to about 1/2 inch thick and cut into squares or circles.
- Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
- Fry the beignets in batches until golden brown, about 2-3 minutes per side.
- Remove from oil and drain on paper towels.
- Dust with powdered sugar before serving.
