Description
A vibrant and flavorful grilled chicken dish marinated in zesty lime, enhanced with chili powder, and topped with creamy avocado and fresh cilantro.
Ingredients
Scale
- 4 boneless chicken breasts
- 2 limes, juiced
- 1 avocado, diced
- 1/4 cup fresh cilantro, chopped
- 1 teaspoon chili powder
- Salt and pepper to taste
- Olive oil
Instructions
- In a mixing bowl, combine the juice of two limes, chili powder, salt, and pepper. Whisk together until well blended.
- Place the chicken breasts into the bowl, ensuring each piece gets a generous coating. Cover and marinate in the refrigerator for at least 30 minutes.
- Preheat your grill or grill pan to medium-high heat.
- Once hot, grill each chicken breast for about 6-7 minutes per side, until the internal temperature reaches 165°F (75°C).
- Remove the chicken from the grill and let it rest for a few minutes before serving.
- Top the chicken with diced avocado and sprinkle with fresh chopped cilantro.
Notes
Use fresh lime juice for the best flavor. For additional taste, marinate chicken for longer. Consider baking at 375°F for 25-30 minutes as an alternative cooking method.
