Description

A vibrant, tangy grilled chicken dish marinated in lime, chili, and topped with creamy avocado for a festive flavor experience.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 lime, juiced
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon chili powder
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional toppings: diced tomatoes or cheese

Instructions

  1. Whisk together the lime juice, olive oil, chili powder, salt, and pepper until well combined and fragrant.
  2. Add the chicken breasts, ensuring each piece gets a generous coating of the marinade. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes.
  3. Preheat your grill to medium-high heat.
  4. Grill the marinated chicken for about 6–8 minutes on each side or until the internal temperature reaches 165°F (75°C).
  5. Remove the chicken from the grill and allow it to rest for a few minutes.
  6. Top each chicken breast generously with diced avocado and chopped cilantro before serving.

Notes

Marinate chicken for up to 24 hours for maximum flavor. Can substitute chicken thighs for a richer taste.
