- 1 small red onion
- 15 ounces black beans
- 1 cup corn kernels
- 1 cup shredded cheddar cheese
- 1 cup cherry tomatoes
- 1 medium avocado
- 1/4 cup fresh cilantro
- Lime wedges
- Sour cream
Instructions
- Preheat your oven to 425°F (220°C).
- Spread diced russet potatoes on a baking sheet, drizzle olive oil, and sprinkle with spices. Toss to coat.
- Roast potatoes for 30-35 minutes, flipping halfway through.
- In a skillet, cook the ground meat over medium heat for about 7-8 minutes until browned.
- Add chili powder, cumin, and chopped red onion to the skillet, cooking for another 5 minutes.
- Stir in black beans and corn, heating through for an additional 3-4 minutes.
- Divide crispy potatoes into four bowls, top with the meat mixture and cheese, letting it melt.
- Finish with cherry tomatoes, diced avocado, cilantro, lime wedges, and sour cream.
