- 4 boneless, skinless chicken breasts
- 1 cup grated Parmesan cheese
- 1 cup Italian-style breadcrumbs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried Italian herbs (oregano, basil, thyme)
- Salt and pepper to taste
- 2 eggs
- 1 tablespoon olive oil
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Combine the Parmesan cheese, breadcrumbs, garlic powder, onion powder, dried herbs, salt, and pepper in a large bowl.
- Whisk the eggs in a separate bowl until well beaten.
- Dip each chicken breast into the egg, then coat with the Parmesan-breadcrumb mixture.
- Arrange the coated chicken on a greased baking sheet and drizzle olive oil over the top.
- Bake for about 25-30 minutes, until golden brown.
- Check for doneness with a meat thermometer (internal temperature should be 165°F/75°C).
- Rest for 5 minutes before slicing and garnish with parsley if desired.
Notes
For a spicy kick, add cayenne pepper to the breadcrumb mixture. This dish can also be prepared in an air fryer.
