Description

Delicious low carb roll ups made with fluffy eggs, fresh spinach, crispy bacon or sausage, and gooey cheese, perfect for a healthy breakfast.


Ingredients

Scale
  • 4 large eggs
  • 1 cup spinach, chopped
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup cooked and crumbled bacon or sausage
  • Salt and pepper to taste
  • Butter or oil for cooking

Instructions

  1. Crack the eggs into a mixing bowl. Add salt and pepper to taste, then whisk until frothy.
  2. Heat a non-stick skillet over medium heat and add butter or oil to coat.
  3. Pour the egg mixture into the skillet, tilting to spread evenly.
  4. Wait for the edges to set, then add spinach, cheese, and bacon or sausage.
  5. Cook for 1-2 minutes until cheese melts and eggs are cooked through.
  6. Roll the egg mixture into a log using a spatula.
  7. Slice into bite-sized pieces and serve warm.
