- 1/2 cup cooked and crumbled bacon or sausage
- Salt and pepper to taste

Instructions
- Crack the eggs into a mixing bowl. Add salt and pepper to taste, then whisk until frothy.
- Heat a non-stick skillet over medium heat and add butter or oil to coat.
- Pour the egg mixture into the skillet, tilting to spread evenly.
- Wait for the edges to set, then add spinach, cheese, and bacon or sausage.
- Cook for 1-2 minutes until cheese melts and eggs are cooked through.
- Roll the egg mixture into a log using a spatula.
- Slice into bite-sized pieces and serve warm.
