Description

A delicious and comforting soup made with sweet potatoes, maple syrup, and crispy bacon.


Ingredients

  • 2 large sweet potatoes, peeled and diced
  • 4 slices of bacon, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1/4 cup maple syrup
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cinnamon
  • 1/4 cup heavy cream (optional)

Instructions

  1. In a large pot, cook the bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add the onion and garlic, sautéing until translucent.
  3. Add the diced sweet potatoes, vegetable broth, maple syrup, salt, pepper, and cinnamon. Bring to a boil.
  4. Reduce heat and simmer for 20-25 minutes, or until sweet potatoes are tender.
  5. Use an immersion blender to puree the soup until smooth. Stir in heavy cream if desired.
  6. Serve hot, topped with crispy bacon.

Notes

  • For a vegan version, omit the bacon and heavy cream.
  • Adjust the sweetness by adding more or less maple syrup to taste.
  • This soup can be stored in the refrigerator for up to 3 days.
