Description
A delicious and comforting soup made with sweet potatoes, maple syrup, and crispy bacon.
Ingredients

- 2 large sweet potatoes, peeled and diced
- 4 slices of bacon, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1/4 cup maple syrup
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cinnamon
- 1/4 cup heavy cream (optional)
Instructions
- In a large pot, cook the bacon over medium heat until crispy. Remove and set aside.
- In the same pot, add the onion and garlic, sautéing until translucent.
- Add the diced sweet potatoes, vegetable broth, maple syrup, salt, pepper, and cinnamon. Bring to a boil.
- Reduce heat and simmer for 20-25 minutes, or until sweet potatoes are tender.
- Use an immersion blender to puree the soup until smooth. Stir in heavy cream if desired.
- Serve hot, topped with crispy bacon.
Notes
- For a vegan version, omit the bacon and heavy cream.
- Adjust the sweetness by adding more or less maple syrup to taste.
- This soup can be stored in the refrigerator for up to 3 days.
