Description

Ingredients

  • 23 pounds boneless pork loin
  • 1/2 cup maple syrup
  • 1/4 cup Dijon mustard
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
  • Fresh thyme or rosemary for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the glaze: In a small bowl, whisk together the maple syrup, Dijon mustard, minced garlic, soy sauce, salt, and pepper.
  3. Prepare the pork: Place the boneless pork loin in a roasting pan and coat it with the glaze using a basting brush.
  4. Roast the pork in the preheated oven for about 1 hour or until the internal temperature reaches 145°F (63°C).
  5. Baste the pork every 20 minutes with additional glaze.
  6. Rest the pork: Once cooked, remove from the oven and let it rest for 10 minutes.
  7. Garnish and serve the sliced pork with fresh herbs.

Notes

You can prepare the glaze a day in advance. Consider using an air fryer for a crispy texture.
