Description

Delicious and fluffy pancakes made with sweet potatoes and drizzled with maple syrup, perfect for a hearty breakfast.


Ingredients

  • 1 cup mashed sweet potatoes
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • Maple syrup for serving

Instructions

  1. In a large bowl, combine the mashed sweet potatoes, flour, baking powder, salt, and sugar.
  2. In another bowl, whisk together the milk, egg, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined.
  4. Heat a non-stick skillet over medium heat and pour 1/4 cup of batter for each pancake.
  5. Cook until bubbles form on the surface, then flip and cook until golden brown.
  6. Serve warm with maple syrup drizzled on top.

Notes

  • For a vegan version, substitute milk with almond milk and egg with a flax egg.
  • Make sure the sweet potatoes are well mashed for a smooth batter.
  • These pancakes can be stored in the refrigerator for up to 3 days.
