- 2 boneless, skinless chicken breasts
- 8 oz pasta of choice
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup parmesan cheese, grated
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Olive oil for cooking
- Fresh parsley for garnish
Instructions
- Cook the pasta in a large pot of salted boiling water until al dente, then drain and set aside, reserving some pasta water.
- In a skillet over medium heat, drizzle olive oil and season chicken breasts with salt and pepper. Cook for 6-7 minutes on each side until golden and cooked through. Remove chicken and let rest before slicing.
- Add minced garlic to the same skillet and sauté for about a minute until fragrant.
- Pour in chicken broth and heavy cream, stirring to combine. Bring to a gentle simmer.
- Stir in Italian seasoning and let it simmer for a couple of minutes to thicken.
- Gradually add in grated parmesan cheese, stirring until melted.
- Return sliced chicken to the skillet and toss with the sauce, then gently add cooked pasta.
- Serve garnished with fresh parsley.
Notes
Make-ahead tips: You can prepare the chicken and sauce in advance, storing them separately in the fridge. Cook pasta fresh when ready to serve.
