Description

A comforting Italian dish featuring tender chicken in a creamy sauce, served with pasta.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 8 oz pasta of choice
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup parmesan cheese, grated
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking
  • Fresh parsley for garnish

Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente, then drain and set aside, reserving some pasta water.
  2. In a skillet over medium heat, drizzle olive oil and season chicken breasts with salt and pepper. Cook for 6-7 minutes on each side until golden and cooked through. Remove chicken and let rest before slicing.
  3. Add minced garlic to the same skillet and sauté for about a minute until fragrant.
  4. Pour in chicken broth and heavy cream, stirring to combine. Bring to a gentle simmer.
  5. Stir in Italian seasoning and let it simmer for a couple of minutes to thicken.
  6. Gradually add in grated parmesan cheese, stirring until melted.
  7. Return sliced chicken to the skillet and toss with the sauce, then gently add cooked pasta.
  8. Serve garnished with fresh parsley.

Notes

Make-ahead tips: You can prepare the chicken and sauce in advance, storing them separately in the fridge. Cook pasta fresh when ready to serve.
