Description

Ingredients

  • 200 g Feta Cheese (Block feta in brine for best melting texture)
  • 1 cup Cherry Tomatoes (Choose ripe tomatoes for a flavor explosion)
  • 2 cloves Garlic (Minced)
  • 1 small Shallot (Finely chopped)
  • 3 large Eggs (Room temperature for even cooking)
  • 2 tablespoons Olive Oil (Extra virgin recommended)
  • 0.5 teaspoon Dried Oregano (Substitute with fresh if needed)
  • 0.25 teaspoon Crushed Red Pepper Flakes (Adjust according to spice preference)
  • Salt (To taste)
  • Fresh Parsley or Basil (For garnish; can substitute with dill or cilantro)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the dish by drizzling a tablespoon of olive oil in an oven-safe baking dish and adding the cherry tomatoes, garlic, and shallots.
  3. Crumble the feta cheese over the tomato mixture.
  4. Season the dish with oregano, crushed red pepper flakes, and salt.
  5. Add three small wells in the mixture and crack an egg into each one.
  6. Drizzle the remaining olive oil over the dish.
  7. Bake for 25-30 minutes until the egg whites are set but yolks remain vibrant.
  8. Garnish with freshly chopped parsley or basil and serve immediately.

Notes

For a quicker version, consider using an air fryer and adjust the cooking time accordingly. Prepped vegetables can be stored in advance to save time.
