Ingredients

  • 1 lb chicken breast, diced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olives, sliced
  • Fresh parsley for garnish

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add diced chicken and season with garlic powder, onion powder, paprika, salt, and pepper.
  3. Cook until the chicken is browned and cooked through, about 7-10 minutes.
  4. In a bowl, combine cooked rice, cherry tomatoes, cucumber, feta cheese, and olives.
  5. Add the cooked chicken to the rice mixture and toss to combine.
  6. Garnish with fresh parsley before serving.
