Description

A vibrant salad featuring roasted beets, chickpeas, and feta, drizzled with a zesty lemon dressing.


Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 medium beets, roasted and chopped
  • 1 cup feta cheese, crumbled
  • 1/4 red onion, thinly sliced
  • 2 cups fresh spinach or mixed greens
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  • Fresh herbs (such as parsley or basil) for garnish

Instructions

  1. Combine the drained chickpeas, roasted beets, crumbled feta cheese, red onion, and fresh spinach or mixed greens in a large mixing bowl.
  2. Whisk together the olive oil, lemon juice, salt, and pepper in a small bowl until well combined.
  3. Drizzle the dressing over the salad mixture and gently toss to combine.
  4. Sprinkle fresh herbs on top just before serving.
