- 8 oz pasta (e.g., rotini or fusilli)
- 2 cups cooked, shredded chicken
- 1 cup cherry tomatoes, halved
- 1 cup cucumbers, diced
- 1/2 cup red onion, thinly sliced
- 1/2 cup Kalamata olives, pitted and sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 2 cloves garlic, minced
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse the pasta with cold water.
- Combine the Ingredients: In a large mixing bowl, add the cooled pasta, shredded chicken, cherry tomatoes, diced cucumbers, sliced red onion, Kalamata olives, and crumbled feta cheese. Mix well.
- Make the Dressing: In a separate bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper until smooth.
- Dress the Salad: Drizzle the dressing over the pasta salad and toss gently until well-coated. Add reserved pasta water if the salad seems too dry.
- Chill and Serve: Cover with plastic wrap and chill in the refrigerator for at least 30 minutes before serving.
