Description

A refreshing Mediterranean Pasta Salad with chicken, bursting with vibrant flavors, perfect for any gathering.


Ingredients

  • 8 oz pasta (e.g., rotini or fusilli)
  • 2 cups cooked, shredded chicken
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumbers, diced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse the pasta with cold water.
  2. Combine the Ingredients: In a large mixing bowl, add the cooled pasta, shredded chicken, cherry tomatoes, diced cucumbers, sliced red onion, Kalamata olives, and crumbled feta cheese. Mix well.
  3. Make the Dressing: In a separate bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper until smooth.
  4. Dress the Salad: Drizzle the dressing over the pasta salad and toss gently until well-coated. Add reserved pasta water if the salad seems too dry.
  5. Chill and Serve: Cover with plastic wrap and chill in the refrigerator for at least 30 minutes before serving.

Notes

This salad can be made ahead of time; it tastes even better the next day as the flavors meld together.
