- 1 cup sun-dried tomatoes, chopped
- 3 cloves garlic, minced
- 1 cup olives, sliced (Kalamata, green, or black)
- 1 cup feta cheese, crumbled
- 2 tbsp high-quality extra virgin olive oil
- Salt to taste
- Black pepper to taste
- 1/4 cup fresh basil leaves, chopped
Instructions
- Cook the pasta: Boil water in a large pot and add the pasta. Cook according to package instructions until al dente. Drain and set aside, preserving some pasta water to use later if needed.
- Sauté the garlic: In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1-2 minutes until fragrant but not browned.
- Mix in sun-dried tomatoes and olives: Stir in the sun-dried tomatoes and sliced olives, letting them cook for another 2-3 minutes.
- Combine with pasta: Add the drained pasta to the skillet, gently tossing to coat it in the oil and vegetables.
- Fold in feta: Carefully add the crumbled feta cheese and mix well. Season with salt and pepper to taste.
- Garnish and serve: Plate the pasta warm, garnished with fresh basil leaves.
