Description

Ingredients

  • 8 oz pasta (penne or fusilli)
  • 1 cup sun-dried tomatoes, chopped
  • 3 cloves garlic, minced
  • 1 cup olives, sliced (Kalamata, green, or black)
  • 1 cup feta cheese, crumbled
  • 2 tbsp high-quality extra virgin olive oil
  • Salt to taste
  • Black pepper to taste
  • 1/4 cup fresh basil leaves, chopped

Instructions

  1. Cook the pasta: Boil water in a large pot and add the pasta. Cook according to package instructions until al dente. Drain and set aside, preserving some pasta water to use later if needed.
  2. Sauté the garlic: In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1-2 minutes until fragrant but not browned.
  3. Mix in sun-dried tomatoes and olives: Stir in the sun-dried tomatoes and sliced olives, letting them cook for another 2-3 minutes.
  4. Combine with pasta: Add the drained pasta to the skillet, gently tossing to coat it in the oil and vegetables.
  5. Fold in feta: Carefully add the crumbled feta cheese and mix well. Season with salt and pepper to taste.
  6. Garnish and serve: Plate the pasta warm, garnished with fresh basil leaves.
