- 1 lb sirloin steak
- 3 tbsp olive oil
- 2 garlic cloves, minced
- 1 tbsp lemon juice
- 2 cups cooked grains (brown rice or quinoa)
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, sliced
- 1/2 cup Kalamata olives
- 1 cup tzatziki sauce
Instructions
- Marinate the steak: In a medium mixing bowl, whisk together olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper. Coat the sirloin with the marinade and let it sit for at least 30 minutes.
- Prepare tzatziki: In another bowl, combine Greek yogurt, grated cucumber, lemon juice, minced garlic, dill, salt, and pepper. Stir until blended and refrigerate.
- Cook the steak: Heat your skillet or grill pan over medium-high heat and sear the marinated steak for 4-5 minutes on each side until desired doneness. Let it rest for 5-10 minutes before slicing.
- Assemble your bowl: Layer cooked grains, slices of steak, cherry tomatoes, cucumber, red onion, and Kalamata olives. Drizzle with tzatziki sauce and serve.
Notes
For best flavor, marinate steak overnight. Can substitute steak with chicken or grilled vegetables for a vegetarian option.
