Description

A comforting Mexican twist on traditional lasagna with layers of corn tortillas, ground beef, refried beans, and zesty taco sauce.


Ingredients

  • 8 Corn Tortillas
  • 1 lb Ground Beef
  • 1 can Refried Beans
  • 1 cup Taco Sauce
  • 2 cups Cheese (Cheddar or Mexican blend)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Brown the ground beef in a skillet over medium heat, breaking it up as it cooks, and drain any excess fat.
  3. Layer corn tortillas at the bottom of a baking dish, followed by beef, refried beans, taco sauce, and cheese. Repeat layers.
  4. Cover with foil to keep moisture in and bake for 30 minutes.
  5. Remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden brown.
  6. Let cool for a few minutes before slicing and serving.

Notes

You can prepare this lasagna ahead of time and refrigerate it for up to 24 hours before baking.
