Description
Mexican Street Corn, also known as Elote, is a popular street food in Mexico made with grilled corn on the cob, coated in a creamy sauce, and topped with cheese and spices.

- 4 ears of corn
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 cup crumbled Cotija cheese
- 1 teaspoon chili powder
- 1 lime, juiced
- Salt to taste
- Fresh cilantro, chopped (for garnish)
Instructions
- Preheat the grill to medium-high heat.
- Grill the corn for about 10-15 minutes, turning occasionally until charred.
- In a bowl, mix together mayonnaise, sour cream, lime juice, chili powder, and salt.
- Once the corn is grilled, remove it from the grill and brush the creamy mixture all over the corn.
- Sprinkle crumbled Cotija cheese over the corn.
- Garnish with chopped cilantro and additional chili powder if desired.
- Serve immediately and enjoy!
Notes
- For a spicier version, add more chili powder or hot sauce.
- Can substitute Cotija cheese with feta cheese if unavailable.
- For a vegan option, use vegan mayonnaise and sour cream.
