Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine shredded coconut, sugar, flour, and salt.
- In another bowl, whisk together milk, melted butter, eggs, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until well combined.
- Grease a muffin tin and pour the batter evenly into each cup.
- Bake for 25-30 minutes or until the tops are golden brown.
- Allow to cool before removing from the tin.
