Instructions
- Marinate the chicken thighs in buttermilk for at least 30 minutes or up to 4 hours for better flavor.
- Combine flour with 1 tablespoon of salt and 1 teaspoon of black pepper in a shallow dish.
- Heat the frying oil in a deep pot or Dutch oven to 325°F (160°C).
- Coat each chicken piece in the flour mixture, ensuring full coverage.
- Fry each piece for 6-8 minutes per side until golden brown and cooked through (internal temperature reaches 165°F).
- Let fried chicken rest on a wire rack while you prepare the hot sauce.
- Whisk 1/2 cup of the hot frying oil with cayenne pepper, brown sugar, and smoked paprika until smooth.
- Dip each fried chicken piece in the hot sauce mixture.
- Assemble the sandwiches with hot chicken and dill pickle chips on toasted brioche buns.
