- 1 pre-made graham cracker crust
Instructions
- In a blender, combine blueberries, honey or maple syrup, coconut milk, vanilla extract, and lemon juice. Blend until smooth.
- Add chia seeds to the mixture and stir well.
- Pour the mixture into the pre-made graham cracker crust.
- Refrigerate for at least 4 hours or until set.
- Serve chilled, garnished with additional blueberries if desired.
Notes
- For a vegan option, use maple syrup instead of honey.
- Make sure to stir the mixture well after adding chia seeds to avoid clumping.
