- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup powdered sugar
- 1 (8 oz) package cream cheese, softened
- 1 cup lemonade concentrate, thawed
- 1 (8 oz) container whipped topping, thawed
- 1 cup fresh blueberries
- 1/4 cup granulated sugar
- 1 tablespoon lemon juice
Instructions
- In a bowl, combine graham cracker crumbs and melted butter, then press into the bottom of a pie dish to form the crust.
- In a separate bowl, beat together the cream cheese and powdered sugar until smooth.
- Add the lemonade concentrate and mix until well combined.
- Fold in the whipped topping gently until fully incorporated.
- Pour the lemonade mixture into the prepared crust and smooth the top.
- In a small saucepan, combine blueberries, granulated sugar, and lemon juice. Cook over medium heat until the blueberries burst and the mixture thickens slightly.
- Drizzle the blueberry mixture over the top of the pie and swirl with a knife for a marbled effect.
- Refrigerate for at least 4 hours or until set before serving.
Notes
- For a stronger lemon flavor, add more lemonade concentrate.
- Can substitute frozen blueberries if fresh are not available.
- Make sure to let the pie chill completely for the best texture.
