- 1/4 cup diced onion
- 1/4 cup frozen peas and carrots
- 2 tablespoons ketchup
- 2 eggs

Instructions
- Heat vegetable oil in a pan over medium heat.
- Add diced onion and chicken, sauté until chicken is cooked through.

- Add cooked rice and ketchup, mixing well. Season with salt and pepper.
- In a separate bowl, whisk together eggs and milk.
- Pour the egg mixture into a heated non-stick pan, cooking until the edges are set.
- Place the fried rice mixture in the center of the omelet and fold the sides over.
- Carefully slide the omelet onto a plate and serve with extra ketchup on top.
