- 2 chicken breasts, boneless and skinless
- 1 cup pesto sauce
- 1 package tortellini
- 1 cup asparagus, chopped
- 1 cup cherry tomatoes, halved
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Season the chicken breasts with salt and pepper.
- Heat olive oil in a large pan over medium heat.
- Add the chicken breasts and cook until browned, approximately 4-5 minutes per side.
- Add pesto sauce, tortellini, chopped asparagus, and halved cherry tomatoes to the pan.
- Cover the pan and cook on medium heat for 10-15 minutes.
- Serve warm, garnished with grated parmesan or fresh basil, if desired.
