Description

A delicious one-pan meal combining pesto chicken, tortellini, and fresh veggies for a quick and easy weeknight dinner.


Ingredients

  • 2 chicken breasts, boneless and skinless
  • 1 cup pesto sauce
  • 1 package tortellini
  • 1 cup asparagus, chopped
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season the chicken breasts with salt and pepper.
  3. Heat olive oil in a large pan over medium heat.
  4. Add the chicken breasts and cook until browned, approximately 4-5 minutes per side.
  5. Add pesto sauce, tortellini, chopped asparagus, and halved cherry tomatoes to the pan.
  6. Cover the pan and cook on medium heat for 10-15 minutes.
  7. Serve warm, garnished with grated parmesan or fresh basil, if desired.
