- 1 cup mushrooms, sliced
- 1 cup rice, long-grain
- 2 cups chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil

- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and minced garlic, sauté until translucent.
- Add chicken thighs and cook until browned on all sides.
- Stir in sliced mushrooms and cook for another 3-4 minutes.
- Add rice, chicken broth, thyme, salt, and pepper.
- Bring to a boil, then reduce heat to low and cover.
- Cook for 20-25 minutes or until rice is tender and liquid is absorbed.
- Fluff with a fork and serve hot.
