- 1 lb smoked sausage (preferably andouille)
- 12 oz penne pasta
- 2 cups chicken broth
- 1 cup heavy cream
- 1 medium onion, diced
- 1 bell pepper, diced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 tbsp Cajun seasoning
- 1 tsp paprika
- Salt and pepper to taste
- 1 cup grated Parmesan cheese (for garnish)
- 2 tbsp olive oil
Instructions
- In a large pot, heat 2 tablespoons of olive oil over medium heat until it shimmers.
- Add the sliced smoked sausage, diced onion, and bell pepper; sauté for about 5-7 minutes until golden brown and aromatic.
- Stir in the minced garlic and let it cook for an additional minute.
- Pour in the diced tomatoes, chicken broth, and heavy cream; stir in the Cajun seasoning, paprika, and season with salt and pepper. Bring to a boil.
- Toss in the uncooked penne pasta; lower the heat and let simmer for 10-12 minutes, stirring occasionally.
- Once the pasta is tender, remove from heat and stir in the grated Parmesan cheese until melted and creamy.
Notes
This dish can be customized with added vegetables or seafood. Store leftovers in an airtight container for up to 4 days.
