- 1 lb smoked sausage
- 12 oz penne pasta
- 2 cups chicken broth
- 1 cup heavy cream
- 1 medium onion, diced
- 1 bell pepper, diced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 tbsp Cajun seasoning
- 1 tsp paprika
- Salt and pepper to taste
- 1 cup grated Parmesan cheese
- 2 tbsp olive oil
Instructions
- In a large pot, heat 2 tablespoons of olive oil over medium heat until shimmering.
- Add sliced smoked sausage, diced onion, and bell pepper to the pot. Sauté for 5-7 minutes until the sausage is browned and the onion is translucent.
- Stir in minced garlic and cook for an additional minute.
- Pour in diced tomatoes, chicken broth, heavy cream, Cajun seasoning, paprika, salt, and pepper. Bring the mixture to a boil.
- Add uncooked penne pasta and reduce heat to a gentle simmer. Cook for 10-12 minutes, stirring occasionally, until the pasta is al dente.
- Remove from heat and stir in grated Parmesan cheese until melted and creamy.
Notes
For a lighter option, substitute heavy cream with half-and-half. Make this dish your own by adding spinach or shrimp.
