Description

A deliciously creamy pasta dish with savory smoked sausage, tender penne, and a hint of Cajun spice, all cooked in one pot for easy cleanup.


Ingredients

  • 1 lb smoked sausage
  • 12 oz penne pasta
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 tbsp Cajun seasoning
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 cup grated Parmesan cheese
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat 2 tablespoons of olive oil over medium heat until shimmering.
  2. Add sliced smoked sausage, diced onion, and bell pepper to the pot. Sauté for 5-7 minutes until the sausage is browned and the onion is translucent.
  3. Stir in minced garlic and cook for an additional minute.
  4. Pour in diced tomatoes, chicken broth, heavy cream, Cajun seasoning, paprika, salt, and pepper. Bring the mixture to a boil.
  5. Add uncooked penne pasta and reduce heat to a gentle simmer. Cook for 10-12 minutes, stirring occasionally, until the pasta is al dente.
  6. Remove from heat and stir in grated Parmesan cheese until melted and creamy.

Notes

For a lighter option, substitute heavy cream with half-and-half. Make this dish your own by adding spinach or shrimp.
