Description
Delicious mini cheesecakes with a creamy orange flavor reminiscent of a classic creamsicle.
Ingredients

- 8 oz cream cheese, softened
- 1/2 cup sugar
- 1/2 cup heavy cream
- 1/4 cup orange juice
- 1 tbsp orange zest
- 1 tsp vanilla extract
- 1/2 cup graham cracker crumbs
- 2 tbsp butter, melted
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs and melted butter, then press into the bottom of mini cheesecake cups.
- In a separate bowl, beat cream cheese and sugar until smooth.
- Add heavy cream, orange juice, orange zest, and vanilla extract to the cream cheese mixture and blend until well combined.
- Pour the cheesecake mixture over the crust in each cup.
- Bake for 20-25 minutes or until set.
- Let cool, then refrigerate for at least 2 hours before serving.
Notes
- For a stronger orange flavor, increase the amount of orange zest.
- These can be topped with whipped cream and additional orange zest for garnish.
- Store leftovers in the refrigerator for up to 3 days.
