Description

Delicious mini cheesecakes with a creamy orange flavor reminiscent of a classic creamsicle.


Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup sugar
  • 1/2 cup heavy cream
  • 1/4 cup orange juice
  • 1 tbsp orange zest
  • 1 tsp vanilla extract
  • 1/2 cup graham cracker crumbs
  • 2 tbsp butter, melted

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs and melted butter, then press into the bottom of mini cheesecake cups.
  3. In a separate bowl, beat cream cheese and sugar until smooth.
  4. Add heavy cream, orange juice, orange zest, and vanilla extract to the cream cheese mixture and blend until well combined.
  5. Pour the cheesecake mixture over the crust in each cup.
  6. Bake for 20-25 minutes or until set.
  7. Let cool, then refrigerate for at least 2 hours before serving.

Notes

  • For a stronger orange flavor, increase the amount of orange zest.
  • These can be topped with whipped cream and additional orange zest for garnish.
  • Store leftovers in the refrigerator for up to 3 days.
