Description

A rich and creamy no-bake cheesecake with a crunchy Oreo crust, fresh cherries, and chocolate chips, perfect for summer gatherings.


Ingredients

  • 24 Oreo Cookies (crushed)
  • 4 tablespoons melted butter
  • 16 oz cream cheese (softened)
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups heavy whipping cream
  • 1 cup fresh cherries (pitted)
  • ½ cup mini chocolate chips
  • 2 tablespoons cherry juice

Instructions

  1. Crush the Oreo cookies in a food processor until fine.
  2. Combine the crushed Oreos with melted butter in a mixing bowl.
  3. Press the mixture into the bottom of a springform pan.
  4. Beat the softened cream cheese until smooth and fluffy.
  5. Add the powdered sugar and vanilla extract to the cream cheese.
  6. Whip the heavy cream until stiff peaks form.
  7. Fold the whipped cream into the cream cheese mixture gently.
  8. Incorporate the pitted cherries and mini chocolate chips.
  9. Layer the mixture over the Oreo crust and smooth the top.
  10. Refrigerate for at least 4 hours or overnight to set.

Allow cream cheese to come to room temperature for a smoother texture. Make a day ahead for best results.
