- 4 thin chicken cutlets
- ½ cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs
- ½ cup grated Parmesan cheese
- 2 tbsp olive oil
- 2 tbsp butter
- 3 garlic cloves, minced
- ½ cup chicken broth
- 1 cup heavy cream
- ¼ cup grated Parmesan (for sauce)
- Salt & pepper to taste
- Fresh parsley or thyme for garnish
Instructions
- Season the chicken cutlets generously with salt and pepper.
- Set up a dredging station with flour, beaten eggs, and a mixture of breadcrumbs and Parmesan.
- Dredge each cutlet in flour, dip in egg, and coat with the breadcrumb mixture.
- Heat olive oil in a skillet over medium-high heat and cook the chicken for 3-4 minutes per side until golden brown.
- In the same skillet, reduce heat, add butter, and sauté garlic until fragrant.
- Add chicken broth, cream, and remaining Parmesan, stirring until thickened.
- Return chicken to the skillet, spoon sauce over, and garnish with parsley or thyme.
- Serve with your choice of sides.
Notes
For a lighter option, substitute heavy cream with half-and-half or coconut cream. Coat chicken ahead of time and refrigerate until ready to cook.
