- 4 boneless, skinless chicken breasts
- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs
- 2 eggs
- 2 cloves garlic, minced
- 1 cup heavy cream
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Combine the grated Parmesan cheese and breadcrumbs in a shallow dish.
- In another dish, whisk the eggs and season with salt and pepper.
- Dip each chicken breast into the egg mixture, letting excess liquid drip off, then coat in the Parmesan and breadcrumb mixture.
- Heat olive oil in a skillet over medium heat and cook the coated chicken until golden brown on both sides, about 3-4 minutes per side.
- Transfer the chicken to a baking dish and bake for about 20 minutes until cooked through (internal temperature should reach 165°F or 75°C).
- In the same skillet, sauté minced garlic for a minute, then pour in the heavy cream and simmer until slightly thickened.
- Serve the chicken topped with the creamy garlic sauce and a sprinkle of fresh parsley.
Notes
For a lighter option, use an air fryer instead of frying in oil. Store leftovers in an airtight container for up to three days.
