Description

Ingredients

  • 2 cups mashed potatoes (cooled)
  • ½ cup grated Parmesan cheese
  • 2 garlic cloves, minced
  • 1 large egg
  • ¼ teaspoon black pepper
  • ½ teaspoon salt
  • 2 tablespoons chopped parsley (optional)
  • 1 cup all-purpose flour
  • 2 large eggs (beaten)
  • 1 cup breadcrumbs (plain or seasoned)
  • Vegetable oil (for deep frying)

Instructions

  1. In a large mixing bowl, combine the cooled mashed potatoes, grated Parmesan cheese, minced garlic, egg, salt, black pepper, and parsley (if using). Mix until well incorporated.
  2. Scoop about 1 tablespoon of the mixture and roll it into a ball. Repeat until all the mixture is used.
  3. Set up coating stations: flour in one bowl, beaten eggs in another, and breadcrumbs in a third.
  4. Roll each potato ball in flour, dip in beaten eggs, then roll in breadcrumbs. Set aside.
  5. Heat vegetable oil in a deep skillet or pan to 350°F (175°C).
  6. Fry the potato balls in batches for 2-3 minutes until golden brown, turning occasionally.
  7. Using a slotted spoon, transfer fried potato balls to a plate lined with paper towels.
  8. Serve warm, optionally garnished with more Parmesan cheese and parsley, alongside your favorite dipping sauces.
