A delicious fusion of peach cobbler and cheesecake, this dessert combines creamy cheesecake with a sweet peach topping and a buttery crust.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 4 cups fresh peaches, sliced
  • ½ cup brown sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until combined. Press into the bottom of a springform pan.
  3. In a large mixing bowl, beat cream cheese, granulated sugar, and vanilla extract until smooth.
  4. Add eggs one at a time, mixing well after each addition.
  5. Pour the cheesecake mixture over the crust in the springform pan.
  6. In another bowl, combine sliced peaches, brown sugar, cinnamon, and lemon juice. Mix well.
  7. Spread the peach mixture over the cheesecake layer.
  8. Bake for 50-60 minutes or until the center is set.
  9. Allow to cool, then refrigerate for at least 4 hours before serving.
