Description

Delightfully airy Peach Macarons that celebrate the essence of summer with a creamy filling and elegant shells.


Ingredients

Scale
  • 100 g almond flour
  • 100 g powdered sugar
  • 70 g egg whites (room temperature)
  • 90 g granulated sugar
  • Peach or orange gel food coloring (optional)
  • 1/2 cup unsalted butter (softened)
  • 1 1/2 cups powdered sugar (for filling)
  • 1/2 cup peach puree
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Sift the dry ingredients: Combine and sift the almond flour and powdered sugar together twice to ensure no lumps remain. Set aside.
  2. Whip the egg whites: In your stand mixer, whip the room-temperature egg whites until foamy. Gradually sprinkle in the granulated sugar while continuing to whip until stiff, glossy peaks form.
  3. Fold gently: Carefully fold the sifted mixture into the meringue using a spatula until the batter attains a smooth consistency.
  4. Pipe the shells: Transfer the batter into a piping bag fitted with a round tip. Pipe small circles onto parchment-lined baking sheets, maintaining equal distance.
  5. Let them rest: Allow the piped macarons to rest for 20-30 minutes until they form a dry skin.
  6. Bake: Preheat your oven to 300°F (150°C) and bake the shells for 14-16 minutes until firm to the touch.
  7. Cool completely: Let them cool on the baking sheet before handling.
  8. Make the filling: Beat the softened butter until creamy and gradually add the powdered sugar, peach puree, vanilla extract, and salt, mixing until fluffy.
  9. Assemble the macarons: Pipe a dollop of filling onto the flat side of one macaron shell and press another shell on top.
  10. Refrigerate: For best flavor, refrigerate the assembled macarons for at least 24 hours before serving.

Notes

Use room-temperature egg whites for optimal volume. Macarons can be made a day in advance and stored in an airtight container.
