- 1 leg of lamb (about 5–6 pounds)
- 4 cloves of garlic, minced
- 2 tablespoons olive oil
- 2 tablespoons fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
- 1 cup red wine (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix minced garlic, olive oil, rosemary, thyme, salt, and pepper.
- Rub the garlic mixture all over the leg of lamb.
- Place the lamb in a roasting pan and pour red wine around it if using.
- Roast in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 145°F (63°C) for medium-rare.
- Let the lamb rest for 15 minutes before slicing.
- Serve with your favorite sides.
