Description

Elevate the classic grilled cheese sandwich with a rich combination of gooey mozzarella and vibrant basil pesto.


Ingredients

  • 4 slices of bread (sourdough or crusty bread)
  • 4 tablespoons basil pesto
  • 1 ½ cups shredded mozzarella cheese
  • 2 tablespoons unsalted butter, softened
  • Optional: ¼ cup grated Parmesan cheese

Instructions

  1. Spread 1 tablespoon of pesto on one side of each slice of bread.
  2. On two slices (pesto side up), layer the mozzarella and sprinkle grated Parmesan if desired. Top with the remaining bread slices, pesto side down.
  3. Butter the outside of each sandwich with softened butter.
  4. Heat a non-stick skillet or griddle over medium heat and grill the sandwiches for 2-3 minutes on each side, pressing gently with a spatula.
  5. Once grilled to a golden brown, remove from the skillet, slice in half, and serve warm.

Notes

For a crispier experience, ensure the skillet is preheated and butter is softened for easy spreading.
