Elevate the classic grilled cheese sandwich with a rich combination of gooey mozzarella and vibrant basil pesto.
Ingredients

- 4 slices of bread (sourdough or crusty bread)
- 4 tablespoons basil pesto
- 1 ½ cups shredded mozzarella cheese
- 2 tablespoons unsalted butter, softened
- Optional: ¼ cup grated Parmesan cheese
Instructions
- Spread 1 tablespoon of pesto on one side of each slice of bread.
- On two slices (pesto side up), layer the mozzarella and sprinkle grated Parmesan if desired. Top with the remaining bread slices, pesto side down.
- Butter the outside of each sandwich with softened butter.
- Heat a non-stick skillet or griddle over medium heat and grill the sandwiches for 2-3 minutes on each side, pressing gently with a spatula.
- Once grilled to a golden brown, remove from the skillet, slice in half, and serve warm.
Notes
For a crispier experience, ensure the skillet is preheated and butter is softened for easy spreading.
