- 1 cup Pineapple Chunks (fresh or canned)
- 1/4 cup Soy Sauce (low-sodium optional)
- 2 cloves Garlic, minced

- Salt and Pepper to taste
- 2 tablespoons Vegetable Oil
- 2 Green Onions, chopped for garnish
Instructions
- In a large skillet, heat vegetable oil over medium heat.
- Add the diced chicken and cook for about 5–7 minutes until browned and cooked through.
- Stir in minced garlic and ginger, cooking for another minute.
- Add pineapple chunks and soy sauce, stirring well to combine.
- Cook for an additional 5–7 minutes until the pineapple caramelizes slightly.
- Meanwhile, cook the rice according to package instructions.
- Serve the pineapple chicken over rice and garnish with chopped green onions.
