Description

Succulent chicken, sweet and tangy pineapple, all cloaked in a luscious sauce for a delightful tropical meal experience.


Ingredients

  • 1 lb Chicken Breast, diced
  • 1 cup Pineapple Chunks (fresh or canned)
  • 1/4 cup Soy Sauce (low-sodium optional)
  • 2 cloves Garlic, minced
  • 1 teaspoon Ginger, minced
  • 2 cups Rice (white or brown)
  • Salt and Pepper to taste
  • 2 tablespoons Vegetable Oil
  • 2 Green Onions, chopped for garnish

Instructions

  1. In a large skillet, heat vegetable oil over medium heat.
  2. Add the diced chicken and cook for about 5–7 minutes until browned and cooked through.
  3. Stir in minced garlic and ginger, cooking for another minute.
  4. Add pineapple chunks and soy sauce, stirring well to combine.
  5. Cook for an additional 5–7 minutes until the pineapple caramelizes slightly.
  6. Meanwhile, cook the rice according to package instructions.
  7. Serve the pineapple chicken over rice and garnish with chopped green onions.

Notes

Consider marinating the chicken for flavor. Customize with added veggies or adjust seasoning to taste.
