- 4 salmon fillets, approximately 6 ounces each
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup fresh or canned pineapple (diced and well-drained)
- 1/4 cup packed light brown sugar
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon minced garlic
- 1/2 teaspoon grated fresh ginger (optional)
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C) and grease a baking dish.
- In a small bowl, whisk together brown sugar, soy sauce, rice vinegar, minced garlic, and ginger.
- Pat the salmon fillets dry and rub with olive oil, seasoning with salt and black pepper.
- Place the salmon skin-side down in the baking dish and spoon two-thirds of the glaze over the fillets. Scatter the drained pineapple around.
- Bake for 12 to 15 minutes until the salmon flakes easily with a fork.
- For a caramelized finish, broil for an additional 1 to 2 minutes.
- Let rest for 5 minutes and garnish with fresh parsley before serving.
Notes
Make the glaze a day in advance for enhanced flavor. Air fry for a quicker method, cooking for 8 to 10 minutes at the same temperature.
