Description

Ingredients

  • 4 salmon fillets, approximately 6 ounces each
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup fresh or canned pineapple (diced and well-drained)
  • 1/4 cup packed light brown sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon minced garlic
  • 1/2 teaspoon grated fresh ginger (optional)
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a baking dish.
  2. In a small bowl, whisk together brown sugar, soy sauce, rice vinegar, minced garlic, and ginger.
  3. Pat the salmon fillets dry and rub with olive oil, seasoning with salt and black pepper.
  4. Place the salmon skin-side down in the baking dish and spoon two-thirds of the glaze over the fillets. Scatter the drained pineapple around.
  5. Bake for 12 to 15 minutes until the salmon flakes easily with a fork.
  6. For a caramelized finish, broil for an additional 1 to 2 minutes.
  7. Let rest for 5 minutes and garnish with fresh parsley before serving.

Notes

Make the glaze a day in advance for enhanced flavor. Air fry for a quicker method, cooking for 8 to 10 minutes at the same temperature.
