- 2 lbs pork shoulder
- 1 can (20 oz) pineapple chunks in juice
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 1/4 cup ketchup
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- Place the pork shoulder in the slow cooker.
- In a bowl, mix together the pineapple chunks (with juice), soy sauce, brown sugar, ketchup, garlic, ginger, black pepper, and red pepper flakes.
- Pour the mixture over the pork in the slow cooker.
- Cover and cook on low for 6-8 hours or until the pork is tender.
- Once cooked, shred the pork with two forks and mix it with the sauce.
- Serve hot over rice or noodles.
Notes
- For a thicker sauce, remove the pork and simmer the sauce on the stove for a few minutes.
- Feel free to add vegetables like bell peppers or carrots for extra nutrition.
- This dish can be made a day in advance and reheated for convenience.
