- 3 ripe bananas
- 1 cup sugar
- 1/2 cup butter, softened
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda

- 1 cup crushed pineapple, drained
- 1/2 cup brown sugar
- 1/4 cup maraschino cherries (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs and vanilla extract, mixing well.
- In another bowl, mash the ripe bananas and then add them to the wet mixture.
- In a separate bowl, combine the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- In a greased baking pan, sprinkle the brown sugar evenly on the bottom.
- Arrange the crushed pineapple and maraschino cherries on top of the brown sugar.
- Pour the banana bread batter over the pineapple layer.
- Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Let it cool for a few minutes before inverting onto a serving plate.
