Delightful cheesecake towers featuring layers of pistachio crust, creamy cheesecake, and tangy blackberry puree.
Ingredients

- 1 1/2 cups crushed pistachios
- 1 cup cream cheese, softened
- 1 cup sour cream
- 1/2 cup granulated sugar
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup blackberry puree
- 1/4 cup gelatin (optional)
- Pistachios for garnish
- Blackberries for garnish
Instructions
- Prepare the crust by mixing crushed pistachios with melted butter and pressing it into the bottom of your molds. Chill for 30 minutes to set.
- In a large bowl, beat cream cheese and granulated sugar until smooth and creamy.
- Mix in sour cream, powdered sugar, and vanilla extract until fully combined.
- Divide the mixture into three separate bowls.
- Mix blackberry puree into the first bowl.
- Layer the mixtures into prepared molds: start with the crust, then alternate cheesecake and blackberry layers.
- If desired, add gelatin to the blackberry puree for a firmer layer.
- Chill filled molds for 4 to 6 hours to set.
- Once set, remove towers from molds and garnish with crushed pistachios and fresh blackberries.
Notes
These towers can be made ahead and stored in the refrigerator for up to three days. Consider using an air fryer for a different texture.
