- 8 oz cream cheese (softened at room temp)
- 2 tbsp heavy cream
- 1 tsp vanilla extract
- Pinch of sea salt
- 2 cups powdered sugar
- Orange food coloring (optional)
- 2 tbsp finely diced pistachios (for garnish)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- Whisk together the eggs, Greek yogurt, sugar, and vanilla extract until well combined.
- Gradually add the melted butter, stirring until fully incorporated.
- Sift together the flour, baking powder, baking soda, salt, and cinnamon in a separate bowl.
- Fold the dry ingredients into the wet mixture until just combined—be careful not to overmix.
- Stir in the grated carrots and pistachios, ensuring an even distribution.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the bread to cool in the pan for about 10 minutes, then turn it out onto a wire rack to cool completely.
- Prepare the frosting by beating softened butter and cream cheese until creamy.
- Add heavy cream, vanilla extract, and pinch of salt. Gradually add the powdered sugar until fluffy.
- Use a piping bag to create decorative shapes on top of the frosting and sprinkle with diced pistachios.
Notes
Let the bread cool completely before frosting to prevent melting. Freezes beautifully for up to three months.
