- 3 cups all-purpose flour or bread flour
- ¼ cup granulated sugar
- 1 tsp salt
- 2 ¼ tsp active dry yeast
- 1 cup cold unsalted butter
- ¾ cup cold milk or water
- 1 cup ground pistachios or pistachio paste
- ½ cup powdered sugar
- ¼ cup almond flour
- ¼ cup unsalted butter (softened)
- 1 egg, beaten
- 1 tsp vanilla extract
- 2 tbsp crushed pistachios (for topping)
- 2 tbsp honey or simple syrup (optional)
Instructions
- Prepare the dough by combining flour, sugar, salt, and yeast in a stand mixer bowl. Add cold milk and mix on low until combined.
- Incorporate the cold, cubed butter gradually. Mix until a rough ball forms.
- Chill the dough by wrapping it in plastic wrap and refrigerating for at least one hour.
- Begin folding the dough out on a floured surface into a rectangle 1/2 inch thick. Fold into thirds like a letter and roll out again, repeating twice with chilling in between.
- Make the filling by blending ground pistachios, powdered sugar, softened butter, almond flour, and vanilla extract until smooth.
- Shape croissants by cutting the dough into triangles, adding a spoonful of filling, and rolling them up tightly.
- Bake at 375°F (190°C) on a lined baking sheet for 20-25 minutes until golden brown.
- Finish by drizzling with honey or simple syrup after baking.
Notes
Prepare the dough a day ahead for improved flavor. You can also use an air fryer for quicker baking.
