Description

Delicious Pistachio Croissants with flaky pastry and creamy pistachio filling, perfect for breakfast or as an afternoon treat.


Ingredients

  • 3 cups all-purpose flour or bread flour
  • ¼ cup granulated sugar
  • 1 tsp salt
  • 2 ¼ tsp active dry yeast
  • 1 cup cold unsalted butter
  • ¾ cup cold milk or water
  • 1 cup ground pistachios or pistachio paste
  • ½ cup powdered sugar
  • ¼ cup almond flour
  • ¼ cup unsalted butter (softened)
  • 1 egg, beaten
  • 1 tsp vanilla extract
  • 2 tbsp crushed pistachios (for topping)
  • 2 tbsp honey or simple syrup (optional)

Instructions

  1. Prepare the dough by combining flour, sugar, salt, and yeast in a stand mixer bowl. Add cold milk and mix on low until combined.
  2. Incorporate the cold, cubed butter gradually. Mix until a rough ball forms.
  3. Chill the dough by wrapping it in plastic wrap and refrigerating for at least one hour.
  4. Begin folding the dough out on a floured surface into a rectangle 1/2 inch thick. Fold into thirds like a letter and roll out again, repeating twice with chilling in between.
  5. Make the filling by blending ground pistachios, powdered sugar, softened butter, almond flour, and vanilla extract until smooth.
  6. Shape croissants by cutting the dough into triangles, adding a spoonful of filling, and rolling them up tightly.
  7. Bake at 375°F (190°C) on a lined baking sheet for 20-25 minutes until golden brown.
  8. Finish by drizzling with honey or simple syrup after baking.

Notes

Prepare the dough a day ahead for improved flavor. You can also use an air fryer for quicker baking.
