A delightful spring dessert featuring nutty pistachio mousse and tart sour cherries, beautifully glazed to perfection.

- 1 cup pistachios
- 1/2 cup sugar
- 1 cup heavy cream
- 1 packet gelatin (or vegetarian alternative like agar-agar)
- 1/2 cup milk
- 2 cups sour cherries (fresh or frozen)
- 1/4 cup water
- 1/4 cup glucose
- 1/2 cup sweetened condensed milk
- Optional: cocoa powder for mirror glaze
- Flour, butter, and eggs (as needed for a sponge base)
Instructions
- Prepare the Pistachio Mousse: Place the pistachios, sugar, and heavy cream in a blender. Blend until smooth.
- Soak the Gelatin: In a small bowl, soak the gelatin in cold water for about 5 minutes. Warm the milk in a saucepan over low heat and add the soaked gelatin until dissolved.
- Combine Mixtures: Fold the milk-gelatin mixture into the pistachio blend with a rubber spatula.
- Mold and Freeze: Spoon the mousse into dome molds and freeze for about 4 hours.
- Cook the Sour Cherry Filling: Combine sour cherries, sugar, and water in a saucepan, cooking until thickened, about 10–15 minutes.
- Create an Indentation: Make a small indentation in each frozen mousse dome and fill with cooled cherry mixture. Freeze again for another hour.
- Make the Mirror Glaze: In a saucepan, combine water, glucose, and sweetened condensed milk. Bring to boil and whisk in dissolved gelatin.
- Glaze the Domes: Pour the warm glaze over the frozen domes for a glossy finish.
- Serve: Gently remove the domes from the molds and allow to thaw slightly before serving.
Notes
Make the mousse and glaze a day in advance to save time. Consider using almonds or hazelnuts in place of pistachios.
