Description

Ingredients

  • 1 cup basmati rice
  • 2 cups vegetable broth
  • 1/2 cup pomegranate seeds
  • 1/2 cup shelled pistachios, chopped
  • 1 small onion, finely chopped
  • 2 tablespoons olive oil
  • 1 teaspoon cumin seeds
  • Salt to taste
  • Fresh parsley for garnish

Instructions

  1. Rinse the basmati rice under cold water until the water runs clear.
  2. In a pot, heat olive oil over medium heat and sauté the chopped onion until translucent.
  3. Add cumin seeds and sauté for another minute until fragrant.
  4. Add the rinsed rice and stir for a couple of minutes to toast it slightly.
  5. Pour in the vegetable broth and add salt to taste. Bring to a boil.
  6. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and the liquid is absorbed.
  7. Remove from heat and let it sit covered for 5 minutes.
  8. Fluff the rice with a fork and gently mix in the pomegranate seeds and chopped pistachios.
  9. Garnish with fresh parsley before serving.
