Description

A delightful fusion of flavors and textures featuring lo mein noodles, ground pork, and a medley of fresh ingredients, perfect for a comforting meal.


Ingredients

  • 8 oz. wide lo mein noodles
  • 1 tablespoon peanut oil
  • 1 pound ground pork
  • 1/4 cup + 2 tablespoons sliced green onions
  • 1/2 cup low-sodium chicken broth
  • 3 tablespoons mirin
  • 2 tablespoons dark soy sauce
  • 1 tablespoon minced garlic
  • 2 teaspoons grated ginger
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sriracha
  • 4 cups coleslaw mix

Instructions

  1. Boil a pot of water and cook the lo mein noodles according to package instructions. Drain and rinse under cold water.
  2. In a large skillet or wok, heat peanut oil over medium-high heat. Add ground pork and brown for 5-7 minutes, stirring frequently, then toss in 1/4 cup of sliced green onions.
  3. In a separate bowl, whisk together chicken broth, mirin, dark soy sauce, garlic, ginger, sesame oil, and sriracha.
  4. Add the cooked noodles and coleslaw mix to the skillet with the browned pork. Drizzle the prepared sauce over the mixture and toss gently for about 2-3 minutes.
  5. Remove from heat, garnish with remaining green onions, and serve.

Notes

Customize with seasonal vegetables or swap proteins as desired. Store leftovers in an airtight container for up to 3 days.
