- 8 oz. wide lo mein noodles
- 1 tablespoon peanut oil
- 1 pound ground pork
- 1/4 cup + 2 tablespoons sliced green onions
- 1/2 cup low-sodium chicken broth
- 3 tablespoons mirin
- 2 tablespoons dark soy sauce
- 1 tablespoon minced garlic
- 2 teaspoons grated ginger
- 1 teaspoon sesame oil
- 1/2 teaspoon sriracha
- 4 cups coleslaw mix
Instructions
- Boil a pot of water and cook the lo mein noodles according to package instructions. Drain and rinse under cold water.
- In a large skillet or wok, heat peanut oil over medium-high heat. Add ground pork and brown for 5-7 minutes, stirring frequently, then toss in 1/4 cup of sliced green onions.
- In a separate bowl, whisk together chicken broth, mirin, dark soy sauce, garlic, ginger, sesame oil, and sriracha.
- Add the cooked noodles and coleslaw mix to the skillet with the browned pork. Drizzle the prepared sauce over the mixture and toss gently for about 2-3 minutes.
- Remove from heat, garnish with remaining green onions, and serve.
Notes
